Beef Rump Tartar



  • 150g rump
  • 1 egg yolk
  • 2tsp tomato sauce
  • 1tsp dijon mustard
  • 20g onions, chopped
  • 15g capers, drained and chopped
  • 15g sweet gherkins, chopped
  • 2g parsley, chopped
  • 5 drops Worcester sauce
  • 5 drops of Tabasco sauce
  1. Trim and dice beef rump evenly.
  2. In a bowl, mix the egg yolk with onions, capers and gherkins.
  3. Add the mustard, tomato sauce, Tabasco, parsley and finally the meat.
  4. Season to taste.
